Directions:

1. In a bowl, combine the semi-sweet chocolate with the bittersweet chocolate.

2. Using a candy thermometer, in a pan, cook the butter with the sugar, water, corn syrup and salt over moderate heat while frequently stirring until the butter melts and the sugar entirely dissolves.

3. Gently and occasionally stir the mixture until it registers 300 degrees F and is beginning to darken.

4. Using a little water, brush down the sides of the pan to prevent the sugar from crystallizing.

5. When the mixture reaches 300 degrees F, this will take between 18-10 minutes; take the pan off the heat.
